Mince that turns tomorrow: five dinners tonight
Mince has the shortest fridge life of almost anything in a standard shop — two to three days, per CSIRO’s refrigerated-storage guide, shorter than other raw meat because mincing exposes so much more surface area to the air. The gap between “bought it” and “this has to be dinner” closes fast, often before the week’s meal plan has caught up.
Mince does not need a recipe under that kind of pressure. It needs a direction. Five, each built from pantry basics plus the mince itself.
1. Spaghetti bolognese
The default, and there is a reason for that: mince, a tin of tomatoes, garlic, and whatever dried herbs are in the cupboard, simmered while the pasta cooks. Twenty-five minutes, one pan for the sauce. It freezes well, too — cook the full pack even if tonight only needs half, and the rest of the pack stops being a problem in the same pot.
2. Tacos or a quick chilli
Mince browned with onion, a tin of beans, and whatever spice mix is on hand — cumin and paprika will do at a pinch. Turns into tacos with whatever wraps or bread are around, or a simple chilli over rice. Fifteen minutes from raw mince to a plate, the fastest of the five.
3. A simple shepherd’s pie base
Mince cooked down with onion, carrot and a splash of stock, topped with mash and baked until the top browns. Longer in the oven, but the active time is short, and this is the one to reach for when the mince has to be used tonight but nobody wants to eat for another hour yet. It holds and reheats better than the rest of this list.
4. Meatballs, baked not fried
Mince mixed with breadcrumbs and an egg if there is one, rolled and baked on a tray rather than fried. Baking takes far less attention than standing over a pan, and raw meatballs freeze exceptionally well — so this is the move when tonight does not need the whole pack. Roll the lot, bake half, freeze the rest raw for the next night the mince question comes up.
5. Fried rice, if there is cooked rice on hand

When tonight is not happening
Some nights there is no realistic path to cooking mince, and the freezer is the answer — not a fourth day in the fridge, hoping it holds. Raw mince freezes well and defrosts cleanly. Freezing before the window closes is a completely different outcome to a pack that quietly slides from “should cook today” into “should have cooked yesterday.”
Why mince catches people out
Two to three days is short enough that a single changed plan — a late night at work, a dinner out — is often all it takes to miss it. Mince is also usually bought without a plan attached (“figure it out later”), so the window can close before a decision gets made at all.
